Lorraine Quiche is a salted pie made with meat and cream. This dish comes from a region in eastern France.

For 4 persons
Ingredient for Pie crust dough :
200 g flour
100 g butter
1 level teaspoon of salt
1 level teaspoon of baking powder
10cl of water
Preparation of the dough:
Mix flour, salt and yeast in a bowl.
Melt butter in a saucepan.
Pour the water and butter in the middle of the flour and mix with a wooden spoon. When this becomes difficult, make a ball and let it rest in the fridge for 1 half hour.
Your dough is ready and with this method it is light.
For the filling :
200 g crust dough
200 g of chicken ham or 200 g of chopped chicken precooked in semi-salt butter
Butter for greasing
Sweet red and green pepper, mushrooms, olives
Cheese
Parsley, basil
3 eggs
20 cl fresh cream
20 cl milk
Salt and pepper
1 pinch of nutmeg
Preparation:
Spread the dough in a pan, prick with a fork. Mix all the ingredients and spread over the dough. Bake in the oven at 180° for 45 to 50 minutes.
