{"id":3285,"date":"2015-08-09T15:34:29","date_gmt":"2015-08-09T14:34:29","guid":{"rendered":"http:\/\/www.tikaraii.fr\/?p=3285"},"modified":"2016-06-13T16:21:24","modified_gmt":"2016-06-13T15:21:24","slug":"dholl-puri","status":"publish","type":"post","link":"https:\/\/www.tikaraii.fr\/de\/dholl-puri\/","title":{"rendered":"Recette mauricienne Dholl puri"},"content":{"rendered":"<p><strong>Temps de Pr\u00e9paration\u00a0: 45 min<\/strong><\/p>\n<p><strong>Difficult\u00e9\u00a0: Moyen<\/strong><\/p>\n<p><strong>Entre 15 \u00e0 20 Dholl puris<\/strong><\/p>\n<p><strong>Ingr\u00e9dients pour le dholl:<\/strong><\/p>\n<ul>\n<li>1 tasse dholl gram<\/li>\n<li>1 tasse et \u00bd d\u2019eau<\/li>\n<li>1 pinc\u00e9e de sel<\/li>\n<li>\u00bd cuill\u00e8re \u00e0 caf\u00e9 de cumin<\/li>\n<li>\u00bd cuill\u00e8res \u00e0 caf\u00e9 de curcuma<\/li>\n<\/ul>\n<p><strong>Ingr\u00e9dients pour la p\u00e2te\u00a0:<\/strong><\/p>\n<ul>\n<li>2 tasses de farine normale<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de curcuma<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de cumin<\/li>\n<li>4 cuill\u00e8res \u00e0 soupe d\u2019huile<\/li>\n<li>Suffisamment d\u2019eau<\/li>\n<\/ul>\n<p><strong>Pr\u00e9paration de la p\u00e2te\u00a0:<\/strong><\/p>\n<p>Tamiser la farine, le cumin, le curcuma et le sel dans un grand saladier.<\/p>\n<p>Verser ensuite l\u2019eau petit \u00e0 petit.<\/p>\n<p>M\u00e9langer jusqu\u2019\u00e0 ce que l'on sente la p\u00e2te devenir bien molle.<\/p>\n<p>Ajouter l'huile et m\u00e9langer \u00e0 nouveau puis ramasser la p\u00e2te en boule. Couvrez la p\u00e2te et laisser reposer 30 min.<\/p>\n<p><strong>Pr\u00e9paration du dholl\u00a0:<\/strong><\/p>\n<p>Verser le dholl, le sel et l\u2019eau dans une casserole et laisser porter \u00e0 \u00e9bullition pendant environ 15 min \u00e0 feu moyen.<\/p>\n<p>Retirer une graine et \u00e9craser avec une fourchette pour v\u00e9rifier si elle est pr\u00eate.<\/p>\n<p>Elle ne doit \u00eatre ni trop dure ni trop cuit, vous devriez pouvoir l\u2019\u00e9craser facilement avec une fourchette.<\/p>\n<p>Retirer du feu et ajouter le cumin et le curcuma. M\u00e9langer bien le tout.<\/p>\n<p>Verser les graines dans un \u00e9gouttoir.<\/p>\n<p>Laisser bien \u00e9goutter, puis retirer les et \u00e9crasez-les \u00e0 l\u2019aide d\u2019une fourchette.<\/p>\n<p>Faite ensuite de toute petite boule d\u2019environs 4 cm de diam\u00e8tre et mettre de c\u00f4t\u00e9.<\/p>\n<p><strong>Pr\u00e9paration finale\u00a0:<\/strong><\/p>\n<p>Chauffer une po\u00eale ou un <a href=\"https:\/\/www.youtube.com\/watch?v=gIO7575TnaU\">tawa <\/a>\u00e0 feu moyen.<\/p>\n<p>Travailler la p\u00e2te de farine l\u00e9g\u00e8rement \u00e0 la main. Si elle colle trop, ajouter de l\u2019huile dans vos mains pour pouvoir manier la p\u00e2te correctement.<\/p>\n<p>Diviser\u00a0 la p\u00e2te en part \u00e9gale.<\/p>\n<p>Faites des petites boules, d\u2019environ 5 cm de diam\u00e8tre chacune et \u00e9taler l\u00e9g\u00e8rement la p\u00e2te avec vos doigts.<\/p>\n<p>Donner la forme d\u2019un petit bol.<\/p>\n<p>D\u00e9poser ensuite le dholl \u00e0 l\u2019int\u00e9rieur, prenez le rebord et recoller l\u00e0 sur elle-m\u00eame de fa\u00e7on \u00e0 ramasser le dholl correctement.<\/p>\n<p>Saupoudrer l\u00e9g\u00e8rement de la farine sur votre planche. D\u00e9poser une petite boule.<\/p>\n<p>A l\u2019aide d\u2019un rouleau \u00e0 p\u00e2tisserie, \u00e9taler tr\u00e8s d\u00e9licatement votre dholl Puri. Retourner apr\u00e8s chaque coup de rouleau.<\/p>\n<p><em>Si vous constatez que le dholl s\u2019\u00e9chappe de la farine et commence \u00e0 coller sur la planche, saupoudrer l\u00e9g\u00e8rement de la farine sur la p\u00e2te.Taper la p\u00e2te partout avec vos mains de fa\u00e7on \u00e0 faire infiltrer la farine \u00e0 l\u2019int\u00e9rieur.<\/em><\/p>\n<p>Faites une cr\u00eape d\u2019environ 1 mm \u00e9paisseur.<\/p>\n<p>Avec un pinceau de cuisine, badigeonner un peu d\u2019huile sur le tawa et d\u00e9poser ensuite le dholl Puri.<\/p>\n<p>Faites cuire les deux c\u00f4t\u00e9s en arrosant de l\u2019huile de nouveau sur la p\u00e2te et laisser cuire 1 min.
