{"id":3117,"date":"2015-07-30T07:54:07","date_gmt":"2015-07-30T06:54:07","guid":{"rendered":"http:\/\/www.tikaraii.fr\/?p=3117"},"modified":"2016-06-13T16:33:52","modified_gmt":"2016-06-13T15:33:52","slug":"briani-poulet","status":"publish","type":"post","link":"https:\/\/www.tikaraii.fr\/de\/briani-poulet\/","title":{"rendered":"Recette mauricienne Briani Poulet"},"content":{"rendered":"<p><strong>Temps de pr\u00e9paration\u00a0: 1 hr 30 min<\/strong><\/p>\n<p><strong>Difficult\u00e9\u00a0: moyenne<\/strong><\/p>\n<p><strong>Briani pour 8 personnes<\/strong><\/p>\n<p><strong>Ingr\u00e9dients de base pour les \u00e9pices (massala) du briani\u00a0:<\/strong><\/p>\n<ul>\n<li>1 cuill\u00e8re \u00e0 soupe de cumin en poudre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de curcuma en poudre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de piment en poudre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de coriandre en poudre<\/li>\n<li>\u00bd cuill\u00e8re \u00e0 caf\u00e9 de Canelle en poudre<\/li>\n<li>\u00bd cuill\u00e8re \u00e0 caf\u00e9 de cardamone en poudre<\/li>\n<li>\u00bd cuill\u00e8re \u00e0 caf\u00e9 de girofle en poudre<\/li>\n<li>\u00bc cuill\u00e8re \u00e0 caf\u00e9 de poivre noir en poudre<\/li>\n<\/ul>\n<p><strong>Ingr\u00e9dients pour la marinade du briani\u00a0:<\/strong><\/p>\n<ul>\n<li>\u00bd tasse de coriandre hach\u00e9e<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe de <a href=\"http:\/\/www.tikaraii.fr\/la-pate-ail-gingembre\/\">p\u00e2te ail gingembre <\/a><\/li>\n<li>1 tasse et \u00bd <a href=\"http:\/\/www.tikaraii.fr\/oignons-frits\/\">d\u2019oignons frits <\/a><\/li>\n<li>\u00bd tasse de menthe hach\u00e9e<\/li>\n<li>1 pot de yaourt nature<\/li>\n<li>\u00bd pot de petit pois frais<\/li>\n<li>2 b\u00e2tons de Cannelle<\/li>\n<li>2 clous de girofles<\/li>\n<li>3 cardamones<\/li>\n<li>Quelques <a href=\"http:\/\/www.cravebits.com\/crowning-glory-ruby-red-saffron\/\">brins de zafran<\/a><\/li>\n<li>2 cuill\u00e8res \u00e0 soupe de mant\u00e8gue<\/li>\n<li>\u00be tasse d\u2019huile<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de lait en poudre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de sucre<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de sel<\/li>\n<li>1 tasse d\u2019eau<\/li>\n<li>1 kilo de poulet (<em>enlever la peau et d\u00e9couper en gros morceaux <\/em>- m<em>ariner dans 1 cuill\u00e8re \u00e0 soupe d\u2019ail gingembre min 2hrs avant la pr\u00e9paration briani)<\/em><\/li>\n<\/ul>\n<ul>\n<li>6 \u0153ufs durs d\u00e9cortiqu\u00e9es<\/li>\n<li>3 pommes de terre de tailles moyenne (\u00e9pluch\u00e9es et d\u00e9coup\u00e9es en 4) \u00e0 faire dorer dans l\u2019huile et le mant\u00e8gue<\/li>\n<li>1 tomate hach\u00e9e<\/li>\n<li>2 piments verts<\/li>\n<\/ul>\n<p><strong>Ingr\u00e9dients pour la pr\u00e9paration finale du briani:<\/strong><\/p>\n<ul>\n<li>750g de riz basmati<\/li>\n<li>2 b\u00e2tons de cannelle<\/li>\n<li>2 clous de girofles<\/li>\n<li>3 cardamones<\/li>\n<li>1 cuill\u00e8re \u00e0 soupe d\u2019huile<\/li>\n<li>1 cuill\u00e8re \u00e0 caf\u00e9 de sel<\/li>\n<li>Quelques <a href=\"http:\/\/www.cravebits.com\/crowning-glory-ruby-red-saffron\/\">brins de zafran<\/a> dilu\u00e9 dans \u00bd tasse d\u2019eau chaude<\/li>\n<li>\u00bd tasse de menthe hach\u00e9e<\/li>\n<li>\u00bd tasse de mant\u00e8gue fondue<\/li>\n<li>\u00bd tasse d\u2019<a href=\"http:\/\/www.tikaraii.fr\/oignons-frits\/\">oignons frits<\/a><\/li>\n<li>Suffisamment d\u2019eau pour faire bouillir le riz<\/li>\n<\/ul>\n<p><strong>Pr\u00e9paration du Briani:<\/strong><\/p>\n<p>Passer les 8 premiers ingr\u00e9dients (Ingr\u00e9dients de base pour les \u00e9pices (massala) du briani<strong>\u00a0<\/strong>) avec un peu d\u2019eau dans un broyeur.<\/p>\n<p>Dans un grand bol, versez le massala du briani et tous les ingr\u00e9dients pour la marinade.<\/p>\n<p>Bien m\u00e9langer le tout et laisser reposer \u00bd hr.<\/p>\n<p>Pr\u00e9parer un grand <a href=\"https:\/\/mauricianismes.wordpress.com\/2009\/10\/22\/dekti\/\">dekti <\/a> (marmite mauricienne) pour la cuisson du briani. De pr\u00e9f\u00e9rence un dekti avec une couverture qui emp\u00eache la vapeur de sortir de la marmite.<\/p>\n<p>Installer d\u00e9licatement les morceaux de poulets dans le fond du dekti.<\/p>\n<p><em>Faire en sorte de d\u00e9poser chaque morceau de poulet de mani\u00e8re \u00e0 ce que le cot\u00e9 avec l' os soit face au\u00a0 fond du dekti et le c\u00f4t\u00e9 \"chair\" dans l'autre sens (face au haut du dekti). Comme chaleur passe directement depuis le fond, \u00e7a emp\u00eachera au poulet de cuire trop rapidement.<\/em><\/p>\n<p>\u00c9taler ensuite les pommes de terre frits et les \u0153ufs durs de fa\u00e7on \u00e0 ce qu\u2019on les retrouve un peu partout dans le dekti.<\/p>\n<p>Verser le m\u00e9lange de massala en prenant soin de bien l' \u00e9taler partout de mani\u00e8re \u00e0 ce que tous les aliments pr\u00e9sents dans le dekti en soit impr\u00e9gn\u00e9s.<\/p>\n<p>Ajouter \u00bd tasse d\u2019eau dans le bol o\u00f9 \u00e9tait le massala afin de r\u00e9cup\u00e9rer le reste de massala et verser dans le dekti.<\/p>\n<p>Prenez une petite quantit\u00e9 d\u2019<a href=\"http:\/\/www.tikaraii.fr\/oignons-frits\/\">oignons frits<\/a> et\u00a0 arroser sur le poulet. Mettre de c\u00f4t\u00e9 pour la pr\u00e9paration finale.<\/p>\n<p><a href=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-1.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-3121\" src=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-1-300x199.jpg\" alt=\"briani 1\" width=\"300\" height=\"199\" srcset=\"https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-1-300x199.jpg 300w, https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-1.jpg 752w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Pr\u00e9parer une grande marmite avec de l\u2019eau, et faire bouillir \u00e0 grand feu.<\/p>\n<p>Ajouter la cardamone, la cannelle, le sel, les clous de girofle et l'huile, puis laisser bouillir pendant 1 min.<\/p>\n<p>D\u00e9poser ensuite votre dekti de briani juste \u00e0 c\u00f4t\u00e9.<\/p>\n<p>Versez ensuite le riz et diminuer sur feu\u00a0 moyen.<\/p>\n<p>Laisser bouillir 1 min et \u00e0 l\u2019aide d\u2019une cuill\u00e8re araign\u00e9e \u00e0 friture (photo ci-dessous) retourner le riz d\u00e9licatement afin d'\u00e9viter que le riz se colle.<\/p>\n<p><a href=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/Ecumoire-araignee-915.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-3140\" src=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/Ecumoire-araignee-915-300x118.jpg\" alt=\"cuill\u00e8re arraign\u00e9e\" width=\"300\" height=\"118\" srcset=\"https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/Ecumoire-araignee-915-300x118.jpg 300w, https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/Ecumoire-araignee-915.jpg 500w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Soulever le riz avec la cuill\u00e8re araign\u00e9e et commencer \u00e0 l'\u00e9taler\u00a0 sur le poulet dans le dekti.<\/p>\n<p>Apr\u00e8s chaque couches de riz, prenez soins d\u2019arroser partout une poign\u00e9e d\u2019<a href=\"http:\/\/www.tikaraii.fr\/oignons-frits\/\">oignons frits<\/a>, 1 cuill\u00e8re \u00e0 soupe de mantegue fondue et 1 cuill\u00e8re a caf\u00e9 de zafran tremp\u00e9.<\/p>\n<p>Proc\u00e9der \u00e0 cette \u00e9tape jusqu\u2019\u00e0 finition du riz.<\/p>\n<p>Installer la menthe hach\u00e9e et\u00a0 \u00bd tasse du reste d\u2019eau du riz que vous avez fait cuire auparavant.<\/p>\n<p><a href=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-21.jpg\"><img decoding=\"async\" loading=\"lazy\" class=\"alignnone size-medium wp-image-3122\" src=\"http:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-21-300x199.jpg\" alt=\"briani 21\" width=\"300\" height=\"199\" srcset=\"https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-21-300x199.jpg 300w, https:\/\/www.tikaraii.fr\/wp-content\/uploads\/2015\/07\/briani-21.jpg 752w\" sizes=\"(max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<p>Couvrez ensuite le dekti et faire cuire \u00e0 feu moyen pendant 10min.<\/p>\n<p>Diminuer ensuite \u00e0 feu doux et laisser cuire pendant 30 \u00e0 40 mins selon l\u2019\u00e9paisseur de votre marmite<em>.<\/em><\/p>\n<p>Pour \u00eatre sure que le briani soit bien cuit, retirer le couvert apr\u00e8s 30 min et enfoncer un grand couteau pour savoir si vous avez encore de l\u2019eau au fond.<\/p>\n<p>A d\u00e9guster chaud, avec en accompagnements, une salade de concombre - carotte, et achards.<\/p>\n<hr \/>\n<p><em>Astuces: <\/em><\/p>\n<p><em>\u00c9viter d\u2019ouvrir la marmite pendant les 15 premi\u00e8res min de la cuisson. La vapeur d\u00e9gag\u00e9e du d\u00e9but\u00a0 joue un r\u00f4le tr\u00e8s important dans la cuisson.<\/em><\/p>\n<p><em>Pour ceux qui ne poss\u00e8de pas un dekti . Vous pouvez \u00e9galement le faire cuire dans une marmite \u00e0 riz traditionnelles, il faudra par contre supprimer les \u00e9tapes de couche de riz.
